An article about us was recently published on the official website of the Michelin Guide, which presents not only our cuisine and food, but also the world that we have built and are building in Őrség, Őriszentpéter. It is a touching and inspiring feeling to see that they are telling stories about us on such a prestigious international platform – about the place that is at the same time a home, a workshop and a meeting place for us. It is part of our lives.
The writing recalls the beginnings: when the old barn building came to life again and began its history as a restaurant, a community space, a gastronomic meeting point for the neighborhood. It reflects the closeness to nature, the harmony of the building and the landscape, and the view that everything that ends up on the plate is closely tied to our environment and the seasons, and to us.
The article also talks in detail about the cuisine: the dishes based on local and seasonal ingredients, the play of fermentation and pickling, the inspirations of our chef duo, and how the motifs of traditional Hungarian cuisine meet modern technologies.
We are grateful for this honorable attention, because we believe it is not only for us, but for everyone who has contributed to the history of Pajta.
To all the team members, our suppliers, and the guests who have honored us with their trust over the years. This article is not only a nice recognition for us, but also a confirmation that honest, open, and courageous cuisine represents value – at home and anywhere in the world.
